Easiest Coconut Pie Ever

2 cups milk
3/4 cup sugar or Splenda
1/2 cup biscuit mix
4 eggs (might try the not real eggs)
1/4 cup butter or margarine melted
1 1/2 teaspoons vanilla (I like a little more)
1 1/3 cups about angel flake coconut

Combine milk, sugar, biscuit mix, eggs butter and vanilla in blender.
Cover and bend on low speed for 3 minutes.
Pour into greased 9 inch pie pan.
Let stand 5 minutes; then sprinkle with coconut.
Bake at 350 for 40 minutes

Serve warm or cold.


Easiest Coconut Pie, Impossible Buttermilk Pie and Impossible Brownie Pie are all basically the same. Just try and then adjust to your taste the next time. Something really quick to put in the oven. -MH
