Easy Turkey & Dressing

For Thanksgiving I always have the big turkey with lots of dressing for the family gatherings.  But throughout the year for smaller dinners I use the Easy Turkey and Dressing recipe.  The recipe is easily reduced by half.  This is not the same dressing I use for the big turkey but it's good.  Try it.

 Easy Turkey & Dressing

- Bake a recipe (1 qt) of cornbread (not sweetened), crumble cooled cornbread in mixing bowl
- In same skillet saute 1/4 cup chopped onion and 1/2 cup chopped celery in 1/2 cup margarine
- Heat 1 cup chicken broth, 1 can cream of chicken soup and 1 can chicken with rice soup
- Combine soups and  veggies
- Season with salt and pepper to taste
- Add as much cooked turkey or chicken (cubed) as desired.
- Pour mixture over cornbread.  Stir.  Pour into 11 x 13" baking dish. 

Bake 45 minutes @ 350 degrees.
